Selecting Beans:

Buy whole bean if you can.
Buy beans that have a roast date ( like Winters Coffee)
Check the freshness by putting your nose near the valve (it looks like a button) and squeeze the bag.
If you get a nice aroma, it's fresh. If you can't find the valve, then you already are headed for the stale bin.
